Harvest Pumpkin Bread
1 1/2 cups flour
1/2 tsp sea salt
3/4 cup sugar
1 tsp baking soad
1 cup pumpkin puree
1/2 cup Ah love Orange Olive Oil
2 eggs beaten
1/4 cup Ah love Pumpkin Spice Balsamic
2 tbl water
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp allspice
1/2 cup toasted
• Preheat oven to 350 degrees
Lightly oil a loaf pan
Shift together all dry ingredients. Set aside.
In another bowl, hand mix beaten eggs, pumpkin, oil, balsamic. Combine with dry ingredients (do not over mix; stir just until blended). If too thick, add up to 2 tbl water until mix blends easily. Stir in nuts if using.
Pour mix in oiled loaf pan. Place in center of oven and bake for 40-50 minutes until a toothpick comes out clean.
Cool on rack for 30 minutes before slicing.When thoroughly cooled, top with Balsamic glaze for more sweetness.
Balsamic Glaze
1 cup powdered sugar
1/4 cup Ah love Pumpkin Spice Balsamic
1 tbl Ah love Orange Olive Oil
1 tbl water, if needed
Mix well until sugar is dissolved. Pour over cake and refrigerate for 1/2 hour until glaze sets. Sprinkle with chopped walnuts.
