About Balsamic Vinegar
What makes it “balsamic?”
Many commercial vinegars calling themselves balsamic shorten the
aging process to get to market more quickly b y adding coloring and
flavoring such as caramel to imitate the thick, rich sweetness of
true balsamic. However, once you taste a traditional Aceto
Balsamico di Modena, you won’t go back to the inferior imitations.
Simply, there is no comparison.
Ah love’s balsamic vinegars are from Modena and are traditional, in
other words aged in the traditional method a minimum of twelve
years. They are as a balsamic should be, a perfect balance of sweet
and tart, thick and full-bodied, yet a wonderful condiment to
enhance your dish, not overpower it.
Some of a producers yield will remain in the barrels for many more
years adding thickness, sweetness and richness to the balsamic. The
resulting vinegar is a prize, especially a 100 year old balsamic,
which the Italians sip like a cordial.
